Mushroom Soup

Ingredients

1 pack (5 oz) enoki mushrooms, see photo
1 stalk green onion (about 1 tablespoon), chopped
1 tablespoon chopped cilantro
1 can of chicken broth  

Directions

1. Mix chicken broth with 2 cups water in a saucepan and heat to boiling
2. Cut the roots off the enoki mushrooms and rinse mushrooms
3. Separate the mushrooms by hand and add them to the saucepan
4. Boil the mushroom for about 4 minutes on medium heat
5. Add chopped green onions and cilantro
6. Remove soup from heat and serve
Optional: Add a few pieces of roasted seaweed
