Stir-Fry Eggplant

Ingredients
3 long Asian eggplants (about 1 lb), cut at a angle or diced to 1-inch cubes
3 cloves garlic, slice or chopped
2 tablespoons soy sauce
Directions
1. Heat 2 tablespoons of olive oil in a frying pan
2. Add garlic, sauté until color changes to light brown
3. Add eggplant, sauté for about 1 minute
4. Add soy sauce, stir constantly for a couple of minutes
5. Add small amount of water, cover the pan with lid, cook for a total of 4 to 5 minutes, remove lid and stir frequently.
6. Remove from heat, transfer to a serving plate
