Ingredients

1 egg
1/2 pound spinach leaves
1/2 tsp salt
1/2 tsp pepper
3 tbsp cooking wine

Directions

  1. Remove the lid from a covered skillet and warm some cooking oil at medium heat.
  2. Add spinach and wine, then arrange the leaves in a ring during stir frying. The hole should be about 2 inches in diameter.
  3. As the spinach starts to wilt, crack the egg into the hole.
  4. Sprinkle the salt and pepper evenly. Then cover the skillet.
  5. Remove the cover, turn the heat off and serve when the egg yolk looks cloudy.
