Ingredients
1 egg
1/2 pound spinach leaves
1/2 tsp salt
1/2 tsp pepper
3 tbsp cooking wine
Directions
- Remove the lid from a covered skillet and warm some cooking oil at medium heat.
- Add spinach and wine, then arrange the leaves in a ring during stir frying. The hole should be about 2 inches in diameter.
- As the spinach starts to wilt, crack the egg into the hole.
- Sprinkle the salt and pepper evenly. Then cover the skillet.
- Remove the cover, turn the heat off and serve when the egg yolk looks cloudy.
