Stir-Fry Shredded Pork with Red Pepper and Mushroom

Ingredients

1/2 lb pork, shredded
1 medium size red pepper
1 pack (5 oz) enoki mushrooms, see photo
2 cloves of garlic (finely chopped or minced)
3 tablespoons soy sauce

Directions

1. Shred the pork and red pepper
2. Cut off the roots of the enoki mushrooms and rinse mushrooms
3. Heat 1 tablespoon of oil in a frying pan
4. Add garlic and heat until the color changes to light brown
5. Add shredded pork to the pan, stir for a few minutes until it is cooked (meat changes color), then remove from the pan
6. Heat 1 tablespoon of oil in the now-empty frying pan
7. Add red pepper and enoki mushrooms, cook for about 4 minutes
8. Add cooked pork back to the pan, mix well
Optional: Add 2 teaspoons starch for thickening
