Stir-Fry Tomato with Eggs

Ingredients

3 eggs
3 roman tomatoes, chopped
1 green onion, chopped

Directions

1. Crack and beat eggs in a bowl
2. Add a pinch of salt to the beaten egg
3. Heat 2 tablespoons of olive oil in a frying pan
4. Add eggs, cook for two minutes or until eggs become solid
5. Remove eggs from the frying pan
6. Heat 1 tablespoon oil in the now-empty frying pan
7. Add tomatoes, sauté for 3 minutes  
8. Add cooked eggs back to the frying pan, mix well with the fried tomatoes
9. Remove from heat, transfer to a serving plate
