Beans & Corn Side Dish

Ingredients

1 can beans, mostly drained (light red, dark red or black are fine)
1 can whole kernel corn, mostly drained
1/2 medium-sized onion
1/2 tsp salt
1/4 tsp pepper
1/4 tsp thyme
1/2 tsp lemon juice

Directions

  1. Heat up a skillet with some cooking oil.
  2. Saute the onion for 2 minutes.
  3. Mix beans, corn, salt and pepper in the skillet.
  4. Stir fry for 3-4 minutes.
  5. Turn off the heat and mix in the thyme and lemon juice.
  6. Pour into a large bowl and serve.
